Chocolate-Scotchie Graham Squares

This is one of my favorite dessert recipes – easy to prepare and always a hit at any get-together. I don’t know where this recipe originated or what it’s really called. I got it from my sister, and while she used white chocolate chips, I adapted it to use my favorite – butterscotch chips.

Chocolate-Scotchie Graham Squares

Ingredients:

  • 14-oz box of crushed graham cracker crumbs
  • 2 14-oz cans of sweetened condensed milk
  • 1 cup semisweet chocolate chips
  • 1 cup butterscotch chips

Preheat the oven to 375 degrees. Coat a 9″ baking pan with non-stick spray. (You can also line the pan with foil, overhanging the sides, and then coat with non-stick spray to make it easier to remove and cut the squares. I find this isn’t necessary though.)

Stir together graham crumbs, condensed milk, and 1/2 cup of each type of chips. Spread into pan and bake for 25 minutes. Then TURN OFF the oven, but let the pan stand in the oven for 10 minutes more.

Finally, sprinkle the remaining 1/2 cup of each type of chips on top and let it stand in the oven again for about 10 more minutes. Allow to cool completely before cutting.

    Instead of foil use parchment paper. It is like wax paper but covered in silicon so it won’t melt and give you that crayola taste.

    This way it will slip right out. You can also use the same technique for brownies, and if you use a square pan, you can lift them right out by using it like a sling.

    Oh, wow, Kelli–someone else who calls these “Hello Dollies”! This is pretty much the one food I remember my mother making, fairly routinely, when I was a kid (my dad’s the cook in the family). And yeah–they have coconut in them. Soooo easy, and far too good.

    These look so good that I’m actually a little grateful that my child has dairy allergy – that way I can’t possibly make them and gain all the weight which would accompany said making.
